HO-HO-KUS, N.J. – Autumn presents another reason to visit the Ho-Ho-Kus Inn & Tavern and taste its new fall menu items.
Highlights from the inn's new dinner menu include grilled marinated octopus with toasted fennel and chorizo couscous, cold smoked duck and sweet potato gumbo with andouille sausage, dirty rice and cornbread madeleines, and a classic pan-roasted New York strip with manchego potato gratin.
With the arrival of Executive Chef Hank Barrett, directing his culinary team of Executive Sous Chef Troy Piegaro and Sous Chef Jon Suarez, sophisticated seasonal dishes executed with bold flavors are coming out of the kitchen, the restaurant's owner said.
"Chef Barrett is a pleasure to work with and his enthusiasm, contagious," said proprietor Laurie Hamm, a longtime local resident who owns the inn with her husband, Gordon. "He's a seasoned professional with superb culinary skills and a hands-on approach to running his kitchen. And as a resident of Paramus for years, he practically lives in the neighborhood."
